A little while ago, Cassey over at Blogilates posted an enthusiastic reaction to a pretty unique, 100% natural recipe. Using only a banana and (an) egg(s), one is supposedly able to make some super tasty and healthy pancakes.
You just mash the banana, whisk in the egg, and then cook it like a normal pancake. Sounds simple enough.
Naturally (no pun intended), I had to try it out as soon as I heard about it.
Which honestly didn't go too well. My first attempt ended way too gooey (my banana wasn't mashed enough) and not too great.
So, I decided I'd try again this weekend.
And everything was going a-okay.
Until it came time to flip the first one.
And then the second one burnt to lovely charcoal color. I consider myself lucky that the picture of that particular disaster didn't turn out well.
But all was made well with a little bit of breakfast cheese, which happens to be my new breakfast staple and a less-addictive substitute for peanut butter. I use the "Belle and the Bees," which is goat cheese and honey. It goes fantastically with pancakes, toast, english muffins, all kinds of things.
And, luckily, it is the perfect breakfast bandaid until I can figure out how to successfully make those gorgeous pancakes.
